I just got my new Taste if Home (my favorite cooking magazine) and found a recipe that I want to try and share, it's sounds really good and VERY easy.
Turtle Pumpkin Pie
Prep: 15 minutes (Plus refrigeration)
1/4 cup plus 2 TBL caramel ice cream topping, divided
1 graham cracker pie crust
1/2 cup plus 2 TBL pecan pieces, divided
1 cup cold milk
2 pkg. (3.4 oz each) vanilla instant pudding
1 cup canned pumpkin
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 tub (8 oz) Cool Whipped Topping, thawed and divided
Pour 1/4 cup caramel topping into the bottom of the graham cracker crust, sprinkle 1/2 cup of the peacan pieces on top.
In a separate bowl, beat together milk, pudding mixes, pumpkin and spices with a wisk until well blended. Gently stir in 1 1/2 cups of Cool Whip. Spread into crust.
Refrigerate at least one hour. Just before serving, top with remaining Cool Whip, caramel topping and peacans.

I've been to Gatlinburg, TN twice. The first time it was just a blurr. Ray was driving a rental car(he won't stop for anything but potty breaks). The second time was with my DD, my SIL & my niece and we played tourist in another rental car. We went to the aquarium there that was really awesome.

I have a similar recipe that I use fresh hashbrowns called "Simply Potatoes" I find these in the refrigerated section of my grocery store. No defrosting and the potatoes are not mushy, like frozen potatoes can be.
I like your idea of crumbled bacon, gonna have to try that. Cheese and bacon go together so well!
I've experimented with different types of cheeses and have made this dish using pepper jack cheese.
Another variation of this recipe is to add diced red and green bell pepper. It looks real festive when you serve it.
I usually bake a big ole ham for Christmas dinner and serve this potato dish with just cheddar cheese (no chillies). I really like the fact that I can prepare this dish a day or two before my dinner and then bake it just before dinner is served.
Hmmm, I wonder how this recipe would taste in a packet meal :B

Sounds interesting :B
Some of my best dishes have come about by improvising, but then some of my worst dishes came about because I was improvising :E

Good Thursday morning!
Today the flooring guy is coming back to finish up a few minor things and hopefully (fingers crossed) by the end of today we can say that the repairs are all commpleted! It's been almost three months ago that this whole thing started.

My family LOVES this pie and asked me to make it every holiday.
Cherry Cheese Pie
1 pkg. (8 oz.) Cream Cheese, softened
1/3 cup sugar
1 cup of Cool Whip
1 Prepared graham cracker Pie Crust (6 oz.)
1 cup canned cherry pie filling
BEAT cream cheese and sugar in medium bowl with electric mixer on medium speed until well blended. Gently stir in whipped topping.
SPOON into crust. Spoon cherry pie filling around edge of pie (you'll have some left over).
Refrigerate at least 3 hours. Store leftover pie in refrigerator.
NOTE: Some times I beat the cherry pie filling in with the cream cheese and sugar and by hand I stir in some chocolate chips for a cherry chocolate cheese pie. YUM!

Wow, some really great suggestions! Keep 'em coming!
Here is my favorite (and easy to make) pumpkin pie recipe. I got this recipe out of a Borden's recipe phamphlet called "They'll Love it" back in 1976!
Peter's Pumpkin Pie
1 unbaked (9-inch) pastry shell
2 cups (one 16 oz. can) pumpkin
1 can Eagle Brand Sweetened condensed milk (not evaporated milk)
2 eggs
1 tsp. cinnamon
1/2 tsp salt
1/2 tsp ginger
1/2 tsp nutmeg
Whipped cream and chopped nuts (optional)
Preheat oven to 425 degrees. In a large bowl, combine filling ingredients and mix well. Pour into unbaked pie shell. Bake 15 minutes and then reduce heat to 350 degrees and continue baking for 25 to 30 minutes or until a knife inserted 1 inch from the edge comes out clean. Cool before cutting.
Garnish with whipped cream and nuts if desired. Refrigerate any left overs.
Enjoy!

Happy first day of October! We are now into the single digits with 9 days until the rally! Woooohooooooooooo :B
Lee, Lee, Lee, the Smokey Mountains in the fall are AWESOME! We drove through there about 6 or 7 years ago when we visited our DD in NC and then drove to Nashville to visit Ray's cousin.
It was an overcast day when we drove through the Smokey Mts. and none of the pictures I took, gave them thar hills justice. In person, it was breathtaking!

For our newbies who have never been to SAL. Here's some information I thought I'd share.
Most of the sites are not level, bring leveling blocks just in case.
We have water & electric sites, there is a dump station near by.
There are lots of deer, racoon and other critters at SAL, do not leave any food out unattended. Isn't that right Lee??? Keep you car doors & windows close at night, the racoons do like to climb in.
We will have a group campfire both Fri. & Sat. night. If a few people bring a little firewood, we'll have plenty of wood.
Don't forget your white elephants and your funny t-shirt!

Thanksgiving Dinner At Camp

I have fixed TG dinner at camp numerous times and wanted to share some of my tips and hope that others will share their tips too.
I make my mash potatoes and dressing at home and then re-heat them each in a crock pot on high for an hour and then low for 2 - 3 hours. I always use a crock pot liner for easy clean up! The crock pots make great serving dishes and also keeps your food hot, even when unplugged.
I roast my turkey in my 18 qt. Nesco Roaster. It will brown if you keep siphoning the drippings off (save drippings for gravy) with a turkey baster. It also helps to rub a little Kitchen Bouquet on the bird before you put it in the roaster.
I have also roasted a 1/2 a turkey in the RV oven. I have the butcher cut about a 15 lb. turkey in half (while it's still frozen). I wrap 1/2 and freeze it for a later date. Or if you are feeding a large group have a friend cook one of the halves in their RV oven.
To roast the bird, I use a Reynolds roasting bag. Be sure to follow the instructions on the package. The roasting bag does a great job of cooking the bird picture perfect and it comes out very moist. It also keeps the oven from getting dirty!!
Place bird in an oblong baking pan on top of an air bake cookie sheet (to evenly distribute the heat) before placing in RV oven.

Crock pot make great stuffing.
I second that!
Prepare your favorite dressing recipe and put all the ingredients in your crock pot. (For easy clean up, line first with a crock pot liner). Cook dressing on high for 1 hour and on low for 2-3 hours. The nicest part of cooking dressing in your crock pot, you already have it in a serving dish that will keep your food hot too!
Call it stuffing or dressing, it's the same thing. Stuffing is dressing you put in the cavity of your bird. Different recipes call for different breads.

I got all my chores done yesterday, now onto some rally stuff.
We are hoping to come down to SAL Thursday night. Ray & I will both try to get off of work early, but we both have to play it by ear.

Tons of Packet Meal Recipes

Reynolds has a ton of great packet recipes. Just go to their web site Reynolds Kitchens and in the recipe search field, type in Packets There is a ton of recipes, for fish, chicken, pork, beef and even vegan too!
Here's a sample recipe.
Oriental Pork Packets
4 sheets (12x18-inches each) Reynolds Wrap® Heavy Duty Aluminum Foil
4 boneless pork chops, about 1/2–inch thick
2 cups broccoli florets
2 medium carrots, sliced
1 medium red bell pepper, cut in strips
1/2 cup sliced water chestnuts (optional)
1/4 cup soy sauce
4 teaspoons sesame oil
2 teaspoons grated fresh ginger or dash ground ginger
Hot cooked rice
PREHEAT oven to 450°F or preheat grill to medium-high.
CENTER one pork chop on each sheet of Reynolds Wrap Heavy Duty Aluminum Foil. Top with vegetables. Combine soy sauce, sesame oil and ginger; spoon over pork chops and vegetables.
BRING up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets.
BAKE 18 to 20 minutes on a cookie sheet in oven OR GRILL 10 to 12 minutes in covered grill.
SERVE over rice.
